PIZZA!



Much less fussy than the bread recipe.

For three pizzas:
270g Strong White Flour
177g warm water
5g salt
15g olive oil
7-10g yeast

Make a dough. Knead for ten minutes. Rise for an hour until doubled in size.

Divide into individual bits (ideally 150g ish per pizza).

Use plenty of flour on the worktop and roll out or stretch into roundy shapes. Put onto  thin baking trays if you've got them but a good result can be had from using well-oiled baking tins. Rest for 10 - 15 mins while you get top ingredients ready.

Splodge tomato sauce (Passata is best but small tinned chopped tomato also works). No need to cook it first.

Scatter anchovies, basil, walnuts, pepperoni, pineapple, sweetcorn fresh and/or dried herbs and mozzarella all over it.

Bake in a hot oven no less than 220 deg C for about 12 minutes. The hotter the oven the better. Try 240 deg C for ten minutes for a crispier result.

Test the base in the middle underneath. If it isn't vaguely cardboardy then it's not cooked. No soggy bottoms please!
