Cod!



A piece of sustainable cod loin from the supermarket should cost about £4 for a massive piece. Yes that is a lot for one bit of shopping but for a special dinner it is only £2 per person if there is two of you.

And it is easy, tasty, goes with virtually anything (not mash) and can make you a domestic goddess because you can actually cook fish!

Get a big bit of cod loin; about 400g-500g for two people. Also ask/look for the fat end not the pointy end if you can.

Ingredients:

1 x Cod loin sustainably caught. One piece 400g-500g
1 x Medium sandwich bag
1 x Heaped tablespoon of white flour (Anything except self-raising)
1 x Heaped teaspoon Paprika or more if you want up to about 3 x tsps
1 x Level tsp Salt
1 x Level tsp Pepper

Butter
Olive Oil

Method:
Chuck all the flour, salt, pepper and paprika into the polythene bag.
Cut the cod into two big pieces and put in the bag
Shake a lot. To completely cover the fish pieces and dry the surface completely with the mixture

Heat a tablespoon of butter and equal amount of olive oil in a wok or frying pan until the butter just starts to sizzle. Fry the fish for 3-4 minutes on each side watching as it cooks because you can actually see the point at which it goes opaque all the way through and that is when it is cooked.

If you are doing all this in a flap or for some other reason the pesky stuff won't cook through then carefully transfer the pieces (Fish-slice required for this as you really don't want it to fall apart) into a baking tray and roast in the oven for a few more minutes. So put the oven on 200 deg C just in case. Be careful not to overcook though!

Put on warm plates with new potatoes and peas or runner beans or in the winter what is nice is lentil and tomatoes. Recipe here soon.
